Serves 10 people

For the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (makes 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Method

To prepare the Citrus Syrup: Place all the components in a saucepan, bring to a light boil, stirring to dissolve. After that, take off the stove and leave to cool entirely. Transfer into a clean bottle, close it and store in the fridge, where it will keep for up to one month.

To make Premix: Pour all the liquids into one sizeable container, let it rest for one hour, then pass it through preferably using muslin, so it's completely strained.

To serve: Add 85ml of the batch mix into a cocktail shaker filled with ice, and agitate gently for a minute to cool it down. Pour into a chilled martini glass or a similar vessel, decorate with a few cranberries adding the final touch using a brief mist of mandarin oil above the glass.
